CHOCOLATE GOOEY BUTTER COOKIES

I've seen these cookies around the foodblogsphere but didn't bother making them until now. My frined MARINA gave me the recipe. It does look like the crinkled cookies but soft. We liked this, i will add chocolate chips on my next batch.

1 (8-ounce) brick cream cheese, room temperature

1 stick butter, at room temperature

1 egg

1 teaspoon vanilla extract

1 (18-ounce) box moist chocolate cake mix

Confectioners' sugar, for dusting

Directions

Preheat oven to 350 degrees F.

In a large bowl with an electric mixer, cream the cream cheese and butter until smooth. Beat in the egg. Then beat in the vanilla extract. Beat in the cake mix. Cover and refrigerate for 2 hours to firm up so that you can roll the batter into balls. Roll the chilled batter into tablespoon sized balls and then roll them in confectioner's sugar. Place on an ungreased cookie sheet, 2 inches apart. Bake 12 minutes. The cookies will remain soft and "gooey." Cool completely and sprinkle with more confectioners' sugar, if desired.

  3. Don't you just love these??!! They are very good also with a french vanilla or butter cake mix. Don't use strawberry, absolutly sickening sweet.

  4. I saw you on foodgawker again--girl, you rock the food photography! Congrats! These went over really well with Den's co-workers but I'm not a big fan of chocolate cookies so I want to try them again with a different cake mix. I was going to try strawberry but now I see Red's comment, I'm gonna have to think twice!

  13. They are in heaven and hell. Heaven for the perfection that is your recipe and hell for the weight they've gained since I started baking LOL. This is the only recipe that I've tried that came out EXACTLY like the pictures. YIIPPPPPPPPEEEEEEE I'm a baker now! Thanks again.
