CHILI LIME CORN


Easy....easy...easy...yet oh sooo good! You can grill or boil which was what i did, either way, it's so good. Got the idea/ recipe from Foodie (Kim)

Ingredients:

Sweet corn

Chili powder

Salt

Lime (sliced)



Sprinkle the mixed chili powder and salt around the corn. Then squeeze lime juice around the corn.

MAIS CON QUESO ICE CREAM (Sweet Corn with Cheese Ice Cream)

Another popular Filipino ice cream flavor. This is my 3rd Filipino ice cream that i've made this summer and we are loving it. If you have noticed, i am basically using similar ingredients and measurements to all my ice cream recipe with some adjustments to the liquid quantity depending on how much juice/liquid i will get from the fruit i'm using.

This ice cream is not just your plain mais (sweet corn) ice cream, it has bits of cheddar cheese in it hence the name Mais con Queso (Sweet Corn with Cheese). Sounds weird? nah...it's actually a perfect combination. Cheddar cheese is a good cheese for dessert, you don't believe me, go surf for desserts using or with cheddar cheese you'll have an array of recipes. Ingredients:

2 large fresh sweet corn
1/4 C cheddar cheese (diced)
4 egg yolks
1 cup heavy cream
1 1/2 c milk
1/2 cup sugar (adjust if your corn isn't the sweet corn variety)


1. Grate corn kernels and milk off the cob.

2. In a pan over medium heat, combine cream, milk and corn kernels and corn milk. Let it simmer.

3. In the meantime, whisk sugar and egg yolks until pale and thick.

4. When cream mixture reaches a simmer, slowly temper your egg mixture w/ the cream mixture about a laddle or two, whisking constantly.

5. Reduce heat to low, add the warmed egg mixture into the saucepan and cook, whisking until mixture is thick.

6. Let this chill for at least an hour.

7. Add and mix the minced cheddar cheese right before you churn the mixture.

8. Pour the mixture in an ice cream maker following the manufacturer's instructions.

PINTOS ( CEBUANO SWEET TAMALES)




I have made this a couple of times but was never satisfied. I have not made this for years until my daughter reminded me about the sweet tamales i use to make while we were at Mexicantown during the Cinco de Mayo. So, i revisited the recipe did some tweaking and finally i believe i perfected the recipe this time=;)
Ingredients:

3 cups scraped young corn (from fresh young corn on the cob)
1 can condensed milk
2 egg yolks
2 tbsp. melted butter
1/4 cup cornstarch
1/4 cup masa harina (corn meal)***
***you will have to adjust the amount of cornmeal depending on the consistency of the mix.

1. Mix all ingredients. Prepare fresh husk of young corn. Use husk near the cob as it is the best part and easier to handle. If you’re using dried corn husk soak in warm water for few minutes.

2. Drop a heaping tablespoon of young corn mixture into middle of corn husk. Fold husk lengthwise and tie ends or bring two ends together, tie then push mixture to center.

3. Steam tied husk (pintos) for at least 30 minutes
