THOOM (GARLIC SAUCE/DIP)

Ingredients:
1 whole garlic bulb
1/2 C extra virgin olive oil
1 T fresh lemon juice ( just an estimate)

Puree the garlic, add the oil slowly until you achieve a mayonnaise consistency. Slowly add the lemon juice. Taste and adjust if necessary.

This is what they serve w/ your pita bread in any Middle Eastern restaurants.
